Why do each of batman's enimies want to kill him and how did they become evil... or crazy?

Because if they didnt there wouldnt be much of a comic/movies. Most of Batmans villians become crazy because they fell into a big container of chemicals or they got disfigured, and the rest just have their moral compass pointing south for no real reason, thats why their called a 2 dimensional character. Plus you gotta remember its fiction.
